Efficiency of sea buckthorn extract in oxidative stability improvement of high oleic sunflower oil

Abstract Sea buckthorn ( Hippophae rhamnoides ) with high antioxidant capacity is distributed all over the world, but has never been used as a natural in oils to replace synthetic antioxidants. Therefore, this study was performed investigate effectiveness of sea extract comparison common rosemary and on retarding lipid oxidation. First extracts were characterised, it found that had higher polyphenol contents, radical scavenging activity, capacity. Then proper concentrations for use these antioxidants determined. Additionally, progress oxidation during cycles frying assessed terms free fatty acids content, peroxide value, p -anisidine TOTOX colour, total polar compounds, Induction period. The general order inhibition oleic sunflower oil degradation was: > BHT control P <0.05).
